This year, we’re travelling to the foothills of the Himalayas with Chef de Partie Alisha Shrestha, who brings a taste of Nepal to the Westville dining experience with her traditional Momo dumplings (£8.75).

From Kathmandu to Enniskillen

Originally from Nepal, Alisha grew up surrounded by food, family, and celebration.
“In Nepal, we have around 35 public holidays a year,” she laughs. “Almost every month is filled with festivals and family gatherings. I loved helping my mum cook large meals for everyone — that joy and connection through food is what inspired me to become a chef.”

After training and gaining international experience in Dubai before settling in Enniskillen, Alisha has brought not only technical skill but also a deep appreciation for the emotional side of food — meals that tell stories, spark memories, and bring people together.

“Cooking for festivals back home taught me patience and joy in feeding others,” she explains. “Working abroad introduced me to new flavours, techniques, and high standards — all of which shaped the chef I am today.”

Introducing the Dish: Momo

Alisha’s special dish for World Food Day is Momo (£8.75) — traditional Nepalese dumplings filled with ground beef and vegetables, accompanied by a nutty, tangy dipping sauce.

“Momo isn’t just food — it’s an emotion,” she says with a smile. “Everyone in Nepal has their own recipe, and every family thinks theirs is the best!”

Served as a starter portion of four dumplings, each one is hand-folded and steamed to perfection. The rich filling, paired with a sauce made from roasted peanuts, sesame, and spices, makes for a comforting, flavour-packed dish that’s both homely and exotic.

Irish Flavours with a Nepalese Twist

When it comes to Irish food, Alisha doesn’t hesitate to share what she loves most:
“The dairy products here are amazing — especially the cheese and butter. They’re so rich and full of flavour. It’s completely different to anywhere else I’ve worked.”

Her favourite dish on the Westville menu? The Confit Duck Leg. “It just melts in your mouth and has such a distinctive flavour,” she says — a perfect reflection of the Westville’s philosophy of blending fine ingredients, patience, and passion.

“What I enjoy most is experimenting with flavours for different functions and events, alongside a team that really takes pride in every dish we prepare together.”
