To mark World Food Day, the Westville Hotel’s kitchen is taking guests on a culinary journey to northern India. Mohit Bedi, from our Gourmet Bros team has prepared some Kashmiri Specials – Lamb Rogan Josh and Phirni, a traditional dessert – for visitors of the Westville Bar and Restaurant to enjoy this weekend.
We sat down with Mohit to learn more about his background, his passion for Kashmiri food, and how he found his way from New Delhi to Enniskillen.
How did you begin your career as a chef?
“I studied Hotel Management in Dehradun, but I always knew I wanted to end up in the kitchen,” Mohit says. “Cooking was a big part of my life growing up. I was always in the family kitchen — watching, helping, learning. It was where I felt most at home.”
That early interest developed into a career. After training and gaining professional experience, Mohit joined the Cassidy Hospitality Group two years ago, where he now works as part of the Westville’s kitchen team.
Why did you choose to make this dish for World Food Day?
“I wanted to cook something that represents Kashmir, which has one of India’s most distinctive cuisines,” he explains. “Lamb is a big part of Kashmiri cooking, and Rogan Josh is probably the most iconic dish. It’s aromatic and rich, with saffron, cardamom, and Kashmiri chillies – the kind of flavours that remind me of home.”
To complete the menu, he’s also prepared Phirni, a creamy rice-based dessert flavoured with cardamom. “It’s a simple dish, but it’s a favourite back home. I think guests here will enjoy it too for something different.”
What’s your favourite thing about working with Cassidy Hospitality Group?
Mohit doesn’t hesitate. “Definitely the team,” he says. “Everyone supports each other, and when you have a good team, it makes all the difference!”
He adds that being far from home, that sense of community matters even more.
How did you end up in Enniskillen?
“It was a bit of a surprise,” Mohit admits. “I was approached online by a recruiter who had seen my resume. Within about two weeks, everything was approved and I was on a plane to Belfast – and on my way to begin working and living in Enniskillen!”
If you could cook for anyone in the world, who would it be?
“Vikas Khanna,” he says, without pause. “He’s been an inspiration to me for years. He represents Indian food beautifully on a global stage, and I’d love the chance to cook for him one day.”
As the Gourmet Bros team are busy at work in the background, Mohit lifts the lid on a pot of freshly prepared Lamb Rogan Josh, and serves up a plate for us to try for ourselves – tender lamb, rich with saffron and cardamom – a perfect taste of Kashmir.
His World Food Day specials are both a tribute to his roots, and a reflection of the diverse talent behind the scenes at the Cassidy Hospitality Group.
